Turkish delight, or lokum, is a sophisticated, jelly-like confection that has been cherished for centuries. The beauty of this dessert lies in its delicate, chewy texture and the floral aroma of rose water. Making it at home requires a bit of patience as the mixture needs to simmer slowly to achieve the perfect gel-like consistency, but the result is a beautiful, dusted cube that feels truly luxurious.

Ingredients

2 cups sugar 1 1/2 cups water 1/2 cup cornstarch 1 tsp cream of tartar 1 tsp rose water and a drop of red food colouring Powdered sugar for dusting

Step 1

Bring the sugar and 1 cup of water to a boil, then reduce the heat and simmer until it reaches the thread stage.

Step 2

In a separate bowl, whisk the remaining water, cornstarch, and cream of tartar until smooth, then slowly pour this into the sugar syrup.

Step 3

Cook the mixture over low heat, stirring constantly for 45 minutes until it becomes thick, translucent, and sticky.

Step 4

Stir in the rose water and colour, pour into a lined square tin, let it set overnight, then cut into cubes and toss thoroughly in powdered sugar.
