Saptami during Navratri is an auspicious day dedicated to Goddess Kalaratri, where pure organic offerings hold immense spiritual significance. This wholesome jaggery halwa (sheera) replaces refined white sugar with unrefined jaggery, creating a rich, caramel-hued offering scented with green cardamom. Roasted in pure ghee with semolina or whole wheat flour, it makes a divine and deeply comforting bhog for festive rituals.

Ingredients

1 cup semolina (sooji) or coarse whole wheat flour (gehun ka atta) 1/2 cup pure ghee 3/4 cup organic jaggery powder 2.5 cups warm water 1/2 teaspoon cardamom powder 2 tablespoons mixed chopped almonds and cashews A few strands of saffron

Step 1

Dissolve the organic jaggery powder and saffron strands completely in two and a half cups of warm water to create a fragrant jaggery syrup.

Step 2

Heat pure ghee in a heavy-bottomed pan and lightly roast the chopped almonds and cashews until golden, then remove and set aside.

Step 3

Add the semolina or whole wheat flour to the remaining ghee in the pan, roasting continuously on medium-low heat for eight to ten minutes until aromatic and deep golden brown.

Step 4

Pour the warm jaggery syrup carefully into the roasted flour while stirring constantly to prevent lumps, cook until the mixture thickens and leaves the sides of the pan, and finish with cardamom powder and roasted nuts.
