One of the South Indian spice mixtures that ensure the dish turns out flavourful is sambar podi masala. It adds a rustic aroma to regional stews and soups and infuses bland dishes like idli with spicy, sweet, and tangy notes. Try the recipe.
8-12 red chillies 1.5 tbsp chana dal 1.5 tbsp urad dal 10-15 curry leaves ⅛ tsp hing ¼ tsp turmeric powder 2 tsp cumin seeds 1/4 cup coriander seeds 1.5 tsp salt ½ tsp methi dana
Dry roast urad dal and chana dal in a saucepan until they are slightly brown.
Saute red chillies, curry leaves, coriander seeds, methi dana, and cumin seeds.
Add roasted ingredients, turmeric, and salt in a blender.
Grind the ingredients into a coarse powder.
Add hing into the mixture and store it in an airtight jar.
Sprinkle the masala on idli or add to sambar for a balanced flavour.
