If you want to cut back on sugar during fasting this sawan, this sabudana kheer is worth a try. Sweetened with stevia in place of refined sugar, it gives the same creamy taste, without altering the whole process.
½ cup sabudana (sago pearls) 500 ml full-fat milk Stevia powder or tablets (as per taste) 2 tbsp chopped almonds 2 tbsp chopped pistachios ½ tsp cardamom powder A few saffron strands 1 tsp ghee (optional)
Wash and rinse the sabudana thoroughly and soak it for at least four to five hours or overnight, if possible, so the pearls turn out to be soft while cooking.
Boil the milk and add the soaked sabudana to it. Keep stirring it constantly over medium flame until the pearls turn soft and appear translucent.
Lower the flame and mix in stevia to this as per the preferred sweetness level.
To this, now add cardamom powder, saffron and chopped almonds and pistachios. Let this cook on low flame for another two minutes.
Serve warm or let it cool down, as per preference, garnish with some extra nuts and enjoy.
