Sabudana kheer is a perfect Navratri bhog dessert that is light and creamy. Prepared by soaking sabudana and blending it with milk, sugar, and chopped nuts, sabudana kheer is a good source of energy during fasting days and also for festive offerings.
½ cup sabudana 2 cups milk 2 tbsp sugar (or as per taste) 2 tbsp chopped nuts (almonds, cashews) ½ tsp cardamom powder 1 tbsp raisins 1 tsp ghee
In a bowl, soak sabudana in water for 3 to 4 hours, until it turns soft. This ensures the pearls swell well and cook evenly without becoming sticky.
In a pan, heat the milk over low heat until it comes to a gentle boil, then add the soaked sabudana, and stir constantly so that it does not stick to the bottom.
Cook over a low flame, stirring occasionally, until the sabudana is translucent and soft and the milk is thick.
Now add sugar, cardamom powder, and raisins, and mix well to combine the flavours. Let the kheer simmer gently until it is smooth.
In another small pan, heat the ghee and lightly roast the chopped nuts until golden, then add them to the kheer.
Serve warm or chilled, as preferred, for Navratri bhog.
