Russian salad blends soft potatoes, peas and carrots with a creamy, mildly tangy dressing that feels both comforting and refreshing. 1 cup boiled potatoes (diced) ½ cup boiled peas ½ cup boiled carrots (diced) ½ cup mayonnaise ½ tsp mustard Salt and pepper
Mix potatoes, peas and carrots gently in a bowl.
Whisk together mayonnaise, mustard, salt and pepper into a smooth dressing.
Pour the dressing over the vegetables and fold carefully to avoid breaking them.
Chill for at least 20 minutes before serving.
