Russian Salad is a delightful mix of veggies, fruits, and mayo that delivers freshness to any meal. Ideal for parties or as a quick side dish, this salad has a perfect balance of sweet, tangy, and spicy flavours in every bite, making it an instant crowd-pleaser.
½ cup boiled, diced potatoes ½ cup boiled, diced carrots ½ cup boiled peas ½ diced apple ¼ cup pineapple chunks ½ cup mayonnaise ¼ tsp black pepper Salt to taste 1 tsp lemon juice
Boil potatoes, carrots, and peas until they turn soft. Drain the excess water and cool completely to prevent them from getting soggy.
Dice the apples and pineapple into small cubes to get a balanced bite.
In a bowl, add boiled vegetables and fruits without mashing them.
Add the mayonnaise, lemon juice, salt, and black pepper to make a rich, creamy coating.
Refrigerate the salad for at least 30 minutes to allow the flavours to blend nicely.
Garnish with some extra pineapple or herbs and serve cold as a side or appetiser.
