Amid the LPG shortage, you’ll need to stick with one-pot recipes. To quickly make a meal that’s also rich in protein, egg curry is the perfect option. Follow these 5 steps and your dish will be ready in 15 minutes.
6-8 large eggs 2 tbsp ghee 1 onion (chopped) 1 tsp ginger-garlic paste 1 tbsp oil (for frying) 2 tomatoes 1/2 tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/4 cup yoghurt (optional) 1/2 cup water Salt to taste Coriander leaves (for garnish)
Boil the eggs, peel them, and lightly fry. Add a pinch of haldi and red chilli powder and fry till golden.
Heat some ghee and saute onions. Add ginger-garlic paste and cook for a few minutes.
Add tomatoes, red chilli, coriander, and cumin powders. Whisk in yoghurt.
Add water and salt. Let the curry simmer. Gently add fried eggs and mix in garam masala.
After 5-10 minutes, garnish with coriander leaves and serve.
