This plum cake is packed with soaked fruits, warm spices and a soft crumb that stays moist for days. It fills the kitchen with a festive aroma and tastes lovely with tea or coffee.
1 cup flour ¾ cup sugar ½ cup softened butter 2 eggs 1 cup mixed dried fruits (raisins, black currants, chopped dates, cherries, prunes) ⅓ cup rum for soaking ½ tsp cinnamon powder ¼ tsp nutmeg powder ¼ tsp clove powder 1 tsp vanilla extract 1 tsp baking powder A pinch of salt
Soak the dried fruits in rum for at least 24 hours. For deeper flavour, soak them for 3 to 7 days in an airtight jar in the fridge.
Cream butter and sugar until light, then add the eggs one at a time.
Fold in the flour, baking powder, spices and vanilla until smooth.
Add the soaked dried fruits, along with a spoonful of the soaking rum, and mix gently.
Transfer the batter to a lined cake tin and bake until risen and golden.
Allow the cake to cool completely so the spices settle and the crumb firms up before slicing.
