200ml whole or oat milk  1 tbsp finely grated organic jaggery  1 tsp instant coffee powder  A tiny pinch of dry ginger powder
Heat the milk in a saucepan over medium heat until it begins to steam, being careful not to let it boil over.
Whisk in the coffee powder and dry ginger powder until fully dissolved and frothy.
Remove the pan from the heat and stir in the grated jaggery until it melts completely into the milk.
Pour the latte through a fine-mesh strainer into your mug to ensure a smooth, silky texture before serving hot.
