Rice papad is an Indian delicacy - a thin, crispy disc-shaped papad made with rice flour. It is sun-dried to perfection until it turns light and airy and then fried or roasted till the treat transforms into a golden, crunchy delight.
1 cup rice flour 2 cups water ½ tsp salt ½ tsp cumin seeds, optional A pinch of asafoetida
Boil water with salt, cumin seeds and asafoetida.
Add rice flour and gradually stir and cook until it forms a smooth dough.
Let the dough cool and roll the balls into thin discs.
Place the papad on white cloth and sundry them for 1-2 days until they turn completely crisp.
Fry in hot oil or roast before serving and store any leftovers in an airtight container.
