That smooth, velvety veg raita you love at restaurants is derived from a perfect balance of ingredients. Know how to make it easily at home to get the restaurant-like taste in every bite.
1½ cups thick fresh curd (well whisked) ¼ cup finely chopped cucumber ¼ cup finely chopped carrot 2 tbsp finely chopped onion 1 tbsp finely chopped capsicum ½ tsp roasted cumin powder ¼ tsp black pepper powder ½ tsp salt (or to taste) 1 tbsp chopped fresh coriander ½ tsp sugar (optional)
In a bowl, whisk some curd until it gets a smooth and lump-free texture. This step is crucial to get that classic restaurant-style consistency.
To the whisked curd, add some finely chopped cucumber, carrot, onion, and capsicum. Mix everything well so that the pieces are coated with curd.
Sprinkle the roasted cumin powder, black pepper, salt, and sugar (optional)—these mild spices help in enhancing the flavour of the raita.
Mix everything evenly with a spoon while maintaining the raita's thick, smooth texture.
Taste and adjust spices if required. Keep the raita in the fridge for about 10 to 15 minutes so that the flavours can settle.
Garnish the raita with fresh coriander and a pinch of roasted cumin powder and serve.
