This chickpea sandwich is filling, nourishing and packed with plant-based protein, making it perfect for a wholesome vegetarian breakfast. The lightly mashed chickpeas absorb spices well and develop a creamy yet textured filling.
1 cup boiled chickpeas (mashed lightly) 2 tbsp yoghurt or vegan mayo ¼ cup chopped onions and cucumbers ½ tsp cumin powder Salt, pepper, 4 bread slices
Mix chickpeas with yoghurt or mayo, onions, cucumbers, cumin, salt and pepper.
Spread the mixture evenly over one slice of bread.
Add the second slice and press gently to secure the filling.
Toast or grill the sandwich until crisp and warm.
