A tricolour salad works best when the colours come naturally from fresh produce and the flavours stay clean and familiar. This version focuses on crunch, freshness, and balance, making it suitable as a light main or a side for a Republic Day lunch. Keeping the components separate until serving helps maintain both colour and texture.
1 cup grated carrot 1 cup chopped cucumber or radish 1 cup blanched spinach leaves or lettuce 2 tbsp roasted peanuts Juice of ½ lemon 1 tbsp olive oil Salt and black pepper to taste
Arrange carrot, cucumber or radish, and greens separately on a platter or lunchbox.
Sprinkle roasted peanuts evenly over the vegetables.
Drizzle olive oil and lemon juice just before closing the box or serving.
Season lightly, toss gently if preferred, and serve fresh as part of a festive meal.
