Mint rice is a simple yet flavourful recipe that is a perfect option for a light and wholesome meal, which pairs perfectly with raita, curries or a tangy pickle. Loved for its quick preparation and unique taste, this recipe is perfect for a quick snack
2 cups cooked basmati rice 1 cup fresh mint leaves 1/2 cup coriander leaves 2 green chillies 1 sliced onion 1 tbsp ginger-garlic paste 2 tbsp oil or ghee 1 tsp cumin seeds 1/2 tsp garam masala 1/2 tsp turmeric powder Salt to taste
Blend mint, coriander, green chillies, and a little water into a smoothen paste.
Heat oil in a pan, add cumin seeds, let them splutter, then add onions and sauté until golden, followed by ginger-garlic paste.
Stir in the mint paste, turmeric, salt, and cook until the raw aroma disappears.
Add cooked rice, garam masala to the mint mixture and gently mix to coat the rice evenly.
Garnish with fresh mint leaves and serve hot with raita or a side of your choice.
