Light, tangy and filled with fresh flavours, lemon coriander noodles make a quick evening snack when you want to have something simple and comforting without too many sauces. The fresh lemon juice and coriander make the noodles refreshing, making them particularly perfect for hot summer days.
200 grams of noodles 1 tbsp oil 4 garlic cloves, finely chopped 1 green chilli, sliced ½ cup cabbage, shredded ¼ cup carrot, julienned 2 tbsp spring onion greens 2 tbsp fresh coriander leaves, chopped 1 tbsp lemon juice ½ tsp black pepper Salt to taste 1 tsp soy sauce (optional)
Cook the noodles until they turn soft but not mushy. Rinse them instantly under cold water and then toss lightly with oil so that they do not stick while cooking.
Finely slice the cabbage, carrots, coriander and spring onions to use further.
In a pan, heat oil and sauté the chopped garlic with green chilli until they turn fragrant, to make the base for the noodles.
Now, add cabbage, carrots and spring onions to this. Stir fry it for a short span on high heat so that the vegetables remain colourful and a bit crunchy.
Lastly, mix the boiled noodles with salt, black pepper and optional soy sauce and toss them gently so that everything mixes evenly.
Turn off the heat and add the fresh lemon juice and coriander leaves from the top to keep the flavours bright and refreshing.
