Kachumber salad relies on very finely chopped vegetables so each spoonful feels balanced and refreshing. The lemon dressing is light and meant to coat the ingredients without weighing them down. Fresh coriander adds a soft herb note that makes the salad feel bright and clean. It pairs naturally with Indian meals, especially richer curries or dals.
1 cup cucumber, finely chopped 1 cup tomatoes, finely chopped ½ cup onion, very finely chopped 1 tbsp lemon juice 1 tsp olive oil (optional but traditional in some homes) Salt, pepper and chopped coriander
Place finely chopped cucumber, tomatoes and onions in a shallow bowl so the dressing hits all surfaces evenly.
Add lemon juice, olive oil, salt and pepper, then mix gently to avoid bruising the tomatoes.
Finish with chopped coriander and serve immediately for maximum freshness.
