Pouring hot espresso directly over ice shocks the coffee, melting the ice too quickly and resulting in a watered-down, bitter brew.
2 shots of freshly pulled espresso 1 cup filtered cold water 1 cup large, solid ice cubes
Fill a tall, sturdy glass completely to the brim with large ice cubes to ensure a slow melt rate.
Pour the cold, filtered water over the ice first, leaving about two inches of space at the top of the glass.
Pull your double shot of fresh espresso into a separate small pitcher.
Slowly pour the hot espresso over the cold water and ice, letting the golden crema cascade through the glass, then give it a gentle swirl.
