Have you tried pink beetroot raita? It is a refreshing addition to Indian meals. It is slightly sweet and boasts the robustness of mustard seeds and curry leaves. Try this recipe, and you will make everyone a fan of your cooking.
1 grated beetroot Salt to taste 2 cups curd ½ cup water 1 tsp mustard seeds 1 tsp olive oil 5-6 curry leaves
Blanch the beetroot for a couple of minutes and grate it.
Whisk curd with water to prepare a smooth blend.
Add grated beetroot into curd and sprinkle salt on the top.
Combine the ingredients, and you will notice the curd turning pink.
Heat oil, add mustard seeds and curry leaves.
Pour the tempering on the beetroot raita before serving.
