Beetroot dahi salad is a rich, cooling dish that blends together the sweetness of beetroot and the creaminess of curd. Every bite feels refreshing, indulgent, and extremely satisfying.
2 medium, boiled, grated Beetroot 1 cup, chilled curd ½ cup, finely chopped cucumber 1, finely chopped green chilli ½ tsp roasted cumin powder ¼ tsp Black salt Salt to taste 1 tbsp, chopped fresh coriander ½ tsp Lemon juice
Boil the beetroot until it turns soft, peel, and grate finely.
Take a bowl, whisk the chilled curd until it turns smooth. Add black salt, roasted cumin, regular salt, and the lemon juice to balance the flavour.
Mix the grated beetroot, chopped cucumber, green chilli, and some coriander leaves. Combine the ingredients to preserve the salad’s bright colour and consistency.
If the consistency of the salad feels thick, add 1–2 tablespoons of water or curd to make a creamy consistency.
Keep the salad in the fridge for 10 to 15 minutes. This helps the flavour mix beautifully and improves the refreshing feel.
Garnish with crushed peanuts just before serving to add some crunch. Serve it chilled as a light and refreshing meal.
