This salad is the definition of "opposite flavors attracting." The grainy sweetness of cold watermelon meets the creamy, sharp saltiness of feta to create a dish that is incredibly hydrating. It isn’t so much a recipe as it is an assembly of high-quality ingredients, where the acidity of lime and the pepperiness of fresh mint tie the whole experience together.
4 cups cold watermelon, cubed 150g high-quality Feta cheese, cubed 1/2 cup fresh mint leaves, torn 1/2 red onion, thinly sliced (optional) Dressing: 2 tbsp extra virgin olive oil, 1 tbsp fresh lime juice, a pinch of sea salt. Method
Arrange the chilled watermelon cubes on a wide platter, avoiding a deep bowl keeps the fruit from sitting in too much pooled juice.
Scatter the feta and red onion slices evenly over the watermelon.
Whisk the olive oil and lime juice together. Drizzle over the salad just before serving.
Top with a generous amount of fresh mint. The salt from the feta will draw out just enough juice to create a refreshing nectar at the bottom of the plate.
