Turnip, or what we call shalgam, is a winter speciality. Though winters offer a bounty of vegetables, turnip definitely stands out because of its taste and ample health benefits. For the late, great Dharmendra, Shalgam gosht was said to be a favourite comfort food, and if you’re looking for a way to pay homage to one of Bollywood’s unforgettable icons, here’s a recipe you can try.
300 gms turnips 750 gms mutton 5 tbsp mustard oil 3-5 cloves 2 black cardamoms 4-6 black pepper corns 2 bay leaves 2 cups chopped onions 2 tsp ginger-garlic paste 2 green chillies 1 cup chopped tomatoes 2 tsp coriander powder 1 tsp turmeric powder 2 tsp Kashmiri red chilli powder 2 tsp fennel powder Salt, to taste
Heat oil in a pressure cooker and add whole spices like cardamom and cloves.
Add chopped onions and saute until golden brown. Then add in the ginger-garlic paste and cook for a minute.
Add the mutton pieces and cook until they change colour.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
Add water and pressure cook until the meat is tender. Now, add in the turnips and cook until they are soft.
Garnish with fresh coriander leaves and serve hot with rice or naan.
