Appam is an easy breakfast recipe with roots in South Indian cuisine. They are healthy and can be prepared to utilise the leftover idli-dosa batter. What if you don’t have leftover batter? Try making them with suji.
2 cups rava 1 cup curd Salt to taste 1 tbsp fruit salt 1 tsp red chilli powder 1 cup boiled corn 1 cup of water 2 tbsp ghee
Mix rava, salt, curd, and water. Make a smooth blend and keep it aside.
Meanwhile, boil corn kernels and cut vegetables of your choice.
Adjust the consistency of the appam batter by adding more water. Fold in corn and veggies.
Grease the appam pan with ghee and add a dollop of the batter in each mould.
When the base is cooked, flip the appams. Let the base turn slightly golden brown.
Serve appams with chutney of your choice.
