Ratatouille is a vibrant French vegetable stew featuring eggplant, zucchini, bell pepper, and herbs. This colourful, wholesome dish delivers a burst of Mediterranean flavour, perfect with crusty bread or as a healthy side.
1 sliced eggplant 1 sliced zucchini 1 sliced red bell pepper 1 chopped tomato 1 chopped onion 3 minced cloves of garlic 2 tbsp olive oil ½ tsp dried thyme & oregano Salt and pepper to taste
Heat olive oil in a pan and sauté the onion and garlic until fragrant.
Add tomatoes and cook until they soften.
Add eggplant, zucchini, and bell pepper, stir well.
Season with herbs, salt, and pepper; cover and cook for 10-12 minutes.
Stir occasionally until veggies are tender, then garnish with basil and serve warm
