Ramdana ladoo is a light and crunchy sweet prepared by mixing popped amaranth, jaggery, and ghee. These bite-sized treats are perfect for fasting, celebrations, or guilt-free snacking when you want something sweet but nourishing.
1 cup ram dana (amaranth seeds) 3/4 cup grated jaggery 2 tbsp ghee 2 tbsp chopped nuts (almonds, cashews, optional) 1/4 tsp cardamom powder 2–3 tbsp water
In a deep pan, dry-roast ramdana. Let the seeds pop like tiny corn while stirring continuously to avoid burning. Transfer the popped amaranth to a plate.
In the same pan, add ghee and grated jaggery with around 2-3 tbsp water. Cook this mixture on a low flame until the jaggery melts and a thick, sticky syrup forms.
Check the consistency of the syrup by dropping a little into water. If it forms a soft ball, it is ready. Add cardamom powder to the jaggery syrup and mix well.
Add the roasted ram dana and chopped nuts to the jaggery mixture. Mix everything quickly so that every grain is evenly coated in the syrup.
Grease your palms with a little ghee, take small portions of the mixture and shape into small round ladoos.
Place the ram dana ladoos on a plate for some time to let them set completely. Once set, store in an airtight box.
