Celebrate Rakshabandhan 2026 with a spectacular homemade ghevar to honour the special sibling bond. This classic Rajasthani sweet features a honeycomb like texture created by pouring a thin batter into hot ghee from a height. Once fried to a crisp golden brown, the porous disc is soaked in a fragrant cardamom sugar syrup. Garnished with silver leaf and chopped nuts, this traditional dessert makes festive family celebrations truly memorable.
1 cup plain flour  1/4 cup solid pure ghee  1/4 cup cold milk  2 cups ice cold water  1 cup sugar  1/2 cup water for syrup  1/2 teaspoon cardamom powder  Pure ghee for deep frying  Mixed chopped nuts for garnish
Whisk the solid ghee in a large bowl with one ice cube until it becomes white and creamy, then gradually fold in the plain flour, milk, and ice cold water to form a completely lump free, thin batter.
Heat pure ghee in a deep, heavy bottomed vessel, then pour the batter in a very thin stream from a height into the centre of the hot ghee, allowing the bubbles to subside before adding more, repeating this until a porous disc forms.
Fry until golden brown, carefully remove the ghevar using a skewer, and place it on a wire rack to drain excess ghee.
Boil the sugar and water to a one string consistency, flavour with cardamom powder, pour the warm syrup over the drained ghevar, and garnish with chopped nuts before serving.
