Gatte ki sabzi is a traditional Rajasthani dish that you can easily add to your lunch or dinner menu. Made with besan ke gatte, the sabzi features a creamy gravy that you can pair it with a roti or jeera rice.
For the Gatte: 2 cups besan 4 tbsp water 1 tbsp oil ½ tsp red chilli powder ½ tsp coriander powder ¼ tsp ajwain (carom seeds) ¼ tsp turmeric powder A pinch of hing A pinch of salt
For the Sabzi: 1 cup curd 1 cup water 2 tbsp oil 2 tbsp coriander leaves 1 tbsp coriander powder 1 tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 1 bay leaf 1 clove 1 cinnamon stick Salt to taste
Knead a dough for gatte with besan, oil, water, and all the spices.
Roll the dough to make cylindrical gatte and cook them in boiling water for about 5 minutes.
Drain the extra water and set the gatte aside.
In another pan, heat some oil and add all the spices. Add curd and spices and simmer.
Mix in the gatte, add salt to taste, garnish with coriander leaves, and enjoy.
