Rajasthani gatta curry is a delightful dish that can be prepared using minimal ingredients. It is easy to prepare, wholesome, and goes well with rice and chapati. Here is how you can make it with yoghurt curry during Shravan.
For Gatta 3 cups besan Salt to taste A pinch of cumin powder 1 tsp red chilli powder 2 tbsp coriander leaves A pinch of hing Water, oil as needed
For Curry 2 tomatoes 1 cup curd 1 tsp red chilli powder ½ tsp turmeric powder ½ tsp cumin 2 green chillies 1-inch ginger 2 tsp coriander powder ¾ tsp garam masala Salt to taste 1 tbsp oil Water as needed
Combine all the ingredients for gatta and prepare a soft dough.
Divide the dough into cylinders and boil them until the surface swells.
After cooling the besan cylinders, cut them and saute them in oil until they are golden brown.
Heat oil and add cumin seeds, turmeric powder, and red chilli powder.
Add tomato puree, green chillies, and ginger. After a while, add curd and remaining spices.
When the curry comes to a boil, add crispy gatta and cook. Garnish it with coriander before serving.
