Made with finger millet flour, ragi roti is a rustic and wholesome South Indian flatbread that’s high in calcium and fibre. It pairs beautifully with chutneys or curd.
1 cup ragi flour (finger millet flour) ¼ cup finely chopped onions 2 finely chopped green chillies 2 tbsp grated carrot 2 tbsp chopped coriander leaves ½ tsp cumin seeds Salt to taste Warm water as needed 1 tbsp oil or ghee (for roasting)
In a bowl, combine ragi flour, onions, chillies, carrot, coriander, cumin, and salt.
Add warm water gradually and knead into a soft dough.
Divide into small balls and pat each into a thin roti using your palms (use a banana leaf or butter paper).
Cook on a hot tawa with little oil or ghee on both sides until brown spots appear.
Serve warm with coconut chutney, curd, or pickle.
