Ragi Malt Recipe: Winter Special Finger Millet Beverage

Made using sprouted nachni flour, the ragi malt is a warm, porridge-like beverage that is consumed sweetened with jaggery. Known to possess multiple health benefits, the malt recipe can also be enriched further with warming spices such as cinnamon and cloves.

INGREDIENTS

4 tablespoons sprouted ragi flour 2 + ½ cups water 5-6 tablespoons jaggery, crushed ½ teaspoon cardamom powder

STEP 1

Combine the ragi flour with half a cup of water in a small bowl to make a lump-free slurry.

STEP 2

Add the remaining water to a heavy-bottomed saucepan and bring to a boil before adding in the slurry and stirring constantly to combine.

STEP 3

Add the jaggery and mix well, allowing the mixture to thicken slightly over low flame.

STEP 4

Stir at intervals for 10-12 minutes, before turning off the heat and pouring it into a cup.

STEP 5

Sprinkle the cardamom powder and stir with a spoon before serving warm.
