This vibrant quinoa salad is packed with crunchy vegetables, protein-rich quinoa, and a zesty lemon dressing. It’s light, refreshing, and perfect as a wholesome lunch, side dish, or post-workout meal.
1 cup rinsed quinoa 2 cups water 1 diced cucumber 1 chopped red bell pepper 1 cup cherry tomatoes ½ finely chopped red onion ¼ cup chopped parsley or mint ¼ cup crumbled feta (optional) For Dressing: 3 tbsp olive oil 2 tbsp lemon juice 1 tsp honey Salt and black pepper to taste
Combine quinoa and water in a saucepan, bring to a boil, then simmer for 15 minutes until fluffy and let it cool completely.
Dice all vegetables and herbs while quinoa cools.
Whisk olive oil, lemon juice, honey, salt, and pepper in a small bowl.
In a large bowl, toss quinoa, veggies, and herbs.
Drizzle the dressing, toss well, top with feta, and chill for 15 minutes before serving for enhanced flavour.
