Quinoa is a protein and fibre-rich ingredient which makes it a hit among gym enthusiasts. Loaded with other vitamins and minerals, it is a perfect pick for breakfast or mid-meal snacks. Try this quinoa salad recipe.
1 cup uncooked quinoa 2 cups water 1 cup cooked chickpeas 1 cup coriander leaves 1 cucumber, bell pepper ¼ cup olive oil, lemon juice ¾ cup red onion 1 tbsp red wine vinegar Pepper to taste Salt to taste 2 garlic cloves
Cook quinoa in two cups of water until it has absorbed the liquid. Keep it aside to fluff up.
Let the quinoa cool off while you prepare the salad.
In a large bowl, mix vegetables, coriander leaves, and chickpeas.
In a jar, prepare a concoction of olive oil, vinegar, salt, garlic, pepper, and lemon juice.
Add quinoa to the vegetable and chickpeas mixture. Pour the dressing over the ingredients.
Toss the ingredients until they are coated with the dressing and enjoy.
