Quinoa salad is a delicious fibre-loaded dish you can have for lunch or dinner. It is a powerhouse of nutrients, especially if you have been trying to eat healthy. Here is the only guide you need to make it.
1 cup roasted tomatoes 3 cups cooked quinoa ⅓ cup pine nuts 2 cups arugula 1 tbsp Italian dressing 1 cup cucumbers ½ tsp salt ¾ cup olives, feta cheese ½ cup red onions A pinch of chilli flakes ½ tsp pepper 1 cup roasted chickpeas 1 cup basil and mint leaves
Chop all the vegetables and toss them in a bowl.
Roughly chop basil leaves and other greens and herbs.
Toss roasted tomatoes, roasted chickpeas, and quinoa into the bowl.
Sprinkle salt, pepper, and chilli flakes.
Add Italian dressing and feta cheese.
Serve this quinoa salad with refreshing drinks on the side.
