Quinoa poha is a healthy twist to the traditional poha, made by replacing flattened rice with protein-rich quinoa. Packed with nutrients, it’s light, gluten-free, and perfect for breakfast or a quick snack.
1 cup washed and cooked quinoa 1 chopped onion 2 slit green chillies 8-10 curry leaves ¼ tsp turmeric powder ½ tsp mustard seeds 2 tbsp roasted peanuts 1 tbsp lemon juice 2 tbsp chopped coriander leaves 1 tbsp oil Salt to taste
Heat oil in a pan, add mustard seeds and let them splutter.
Add curry leaves, green chillies, 1 chopped onion and sauté until the onion softens.
Mix in turmeric powder and salt as needed.
Add cooked quinoa, roasted peanuts, gently mix.
Turn off the heat, stir in some lemon juice and garnish with chopped coriander leaves.
