Quinoa khichdi is a nutritious, protein-rich Indian dish made with quinoa, moong dal, vegetables, and mild spices. It's light, gluten-free, easy to digest, and perfect for a healthy lunch or dinner.
½ cup rinsed quinoa ¼ cup washed moong dal 1 tbsp ghee/oil ½ tsp cumin seeds 1 pinch hing ½ tsp turmeric 1 tsp grated ginger 1 chopped onion 1 chopped tomato ½ cup mixed veggies (carrot, peas, beans) Salt to taste 3 cups water
Soak ½ cup quinoa and ¼ cup moong dal for 10–15 minutes.
Sauté cumin, hing, ginger, onion, and tomato in ghee or oil.
Add turmeric, salt, and chopped vegetables of your choice.
Mix in the soaked quinoa and dal with 3 cups of water.
Cook until soft (2 whistles in cooker or 25 mins in pan), and serve hot with ghee or curd.
