After a long working day, when you crave a satisfying dinner, spaghetti can be a reliable option. It can be prepared quickly, feels comforting with every bite, and only requires ingredients you already have in your kitchen.
200 g spaghetti 2 tbsp olive oil 4 cloves of garlic 1 cup tomato puree ½ tsp red chilli flakes ½ tsp oregano 1 tsp salt ½ tsp black pepper ¼ cup grated cheese 2 tbsp chopped basil
In a vessel, boil spaghetti in salted water for about 8–10 minutes until al dente. Drain and reserve the pasta water to use later .
In a pan, heat the olive oil, add the finely chopped garlic, and sauté over low heat until aromatic but not browned.
To this, now add tomato puree, salt, chilli flakes, and oregano. Cook the sauce until it is thick.
Now, to the sauce: pour in the reserved pasta water and mix well so it's not watery.
Add the boiled spaghetti to the pan and toss gently so the sauce coats each piece well. Cook it for a short time so that the flavours get absorbed quickly.
In the end, sprinkle it with black pepper, grated cheese, and fresh basil, and serve the hot spaghetti.
