Quick Miso Soup Recipe To Sip During A Chilly Evening

A Japanese meal component—the miso soup is a deliciously umami broth which can be enriched with vegetables and tofu for a light supper or as a prelude to an elaborate meal. Recreate your own version, inspired by the traditional recipe to enjoy a restaurant-style experience within the comfort of your kitchen.

INGREDIENTS

2 cups water 1 vegetable stock cube 2 tablespoons miso paste 2 pakchoy, chopped ¼ cup spring onions, chopped 200 grams firm tofu, cubed 1 sheet seaweed (optional)

STEP 1

Add the water to a saucepan and crumble in the vegetable broth cube into it, to bring to a simmer.

STEP 2

As the liquid begins to warm up, use a few tablespoons of it to dilute the miso paste in a bowl before adding it back to the stock.

STEP 3

Tip in the chopped pakchoy and simmer for 4-5 minutes before turning off the heat and adding in the tofu as well as spring onions.

STEP 4

Adjust seasoning using some salt, if required and transfer into bowls before serving hot.
