Dessert does not always require an oven or a complicated list of baking ingredients. The creamy malai sandwich is a testament to the beauty of resourcefulness and simple pleasures. Rooted in nostalgia, this sweet treat repurposes the thick layer of fresh milk cream that naturally forms after boiling whole milk. When paired with soft slices of fresh white bread and a dusting of granulated sugar, the malai provides an incredibly rich and velvety texture.
4 slices fresh white bread  1/2 cup thick fresh malai (milk cream)  2 tbsp granulated sugar  1/4 tsp cardamom powder  2 tbsp mixed nuts (almonds and pistachios), finely chopped
Collect the thick malai from cooled boiled milk and whisk it lightly in a small bowl with the cardamom powder until smooth.
Spread a generous layer of the creamy malai over two slices of the fresh white bread.
Sprinkle an even layer of sugar and the finely chopped nuts directly over the cream to add sweetness and crunch.
Top with the remaining bread slices, press down gently to seal the fillings, and slice into neat triangles before serving.
