Sandesh is a beloved Bengali sweet classic celebrated for its melt-in-the-mouth texture and delicate milky flavour. While traditional sandesh requires curdling milk from scratch, using fresh soft paneer streamlines the process without compromising on taste or tradition. Scented with green cardamom and saffron, and garnished with chopped pistachios and rose petals, this quick paneer sandesh offers a luxurious, handmade dessert option for autumn festive celebrations.

Ingredients

2 cups fresh soft paneer (cottage cheese), crumbled or grated finely 1/2 cup condensed milk or powdered sugar 2 tablespoons milk powder (optional, for added richness) 1/2 teaspoon cardamom powder A pinch of saffron strands dissolved in 1 teaspoon warm milk Slivered pistachios and dried rose petals for garnish

Step 1

Knead the crumbled fresh paneer thoroughly on a clean plate or board with the heel of your palm for five to seven minutes until it becomes smooth and dough-like.

Step 2

Transfer the kneaded paneer to a non-stick pan, add the condensed milk (or powdered sugar and milk powder), and cook on low heat for four to five minutes, stirring continuously until the mixture thickens and leaves the sides of the pan.

Step 3

Stir in the cardamom powder and saffron milk, mixing well before removing from heat and allowing the mixture to cool down just enough to handle.

Step 4

Shape the warm mixture into small smooth balls or press them into festive silicone moulds, then garnish each piece with slivered pistachios and dried rose petals before serving.
