The classic recipe of using a simple but flavourful tomato sauce to coat cooked pasta—also known as arabiatta—is a delicious and no-fuss preparation for when dinner ideas seem bleak. Spruce it up with vegetables, protein or even a salad on the side to make a hearty and delicious meal.
200 grams penne/spaghetti 4 tomatoes, grated ½ onion, finely chopped 4-5 garlic cloves, grated 2 tablespoons olive oil 1.5 teaspoons red chilli flakes 1 teaspoon dried oregano 2-3 tablespoons parmesan cheese 1 tablespoon chopped parsley Salt and pepper, to taste
Add water to a large pot and bring to a boil for the pasta while heating the olive oil in a separate saucepan.
Tip in the minced garlic and red chilli flakes into the oil and cook for a minute before adding in the onions and sauteeing until softened.
Add the grated tomatoes, season with salt, pepper and oregano before letting it simmer for 15-20 minutes.
Meanwhile, add the pasta of choice to the boiling water in the pot and cook for 8-10 minutes, until al dente.
Stir gently to combine using the leftover cooking liquid, until the sauce clings to the pasta and forms a cohesive mixture.
Serve hot with a sprinkle of parmesan cheese and parsley, along with some garlic bread or salad on the side.
