Egg Chilla is a quick and healthy breakfast and snack made with beaten eggs, spices, and vegetables. It can be customised with your favourite veggies and enjoyed with chutney or bread for a wholesome meal.
2 eggs 2 tbsp finely chopped onion 1 tbsp finely chopped tomato 1 tbsp finely chopped capsicum 1 tbsp chopped coriander leaves 1 finely chopped green chilli ¼ tsp red chilli powder ¼ tsp turmeric powder Salt to taste 1 tsp oil or ghee, for cooking
Crack 2 eggs into a bowl, add onion, tomato, capsicum, green chilli, coriander leaves, red chilli powder, turmeric, salt, and whisk well.
Heat a non-stick pan and grease it lightly with oil or ghee.
Pour the egg mixture onto the pan and spread it gently like a pancake.
Cook on medium flame for 2-3 minutes until the base is set, then flip and cook the other side for 1-2 minutes.
Serve hot with mint chutney, tomato ketchup, or buttered toast.
