An innovative sweet treat to enjoy the summer fruit, this mango jelly recipe utilises a handful of easily available ingredients. Perfect to spend some quality time in the kitchen, pair this mango jelly with a dollop of fresh whipped cream.
2 cups mango puree 1 cup water ½ cup sugar 3 tablespoons gelatine powder Juice of 1 lime
In a small bowl, sprinkle gelatine powder over 1/2 cup of water. Let it sit for about 5 minutes to bloom.
Combine one cup of water and sugar in a saucepan and stir constantly over medium heat, until the sugar is completely dissolved.
Add the bloomed gelatine mixture to the hot syrup and stir until the mixture has no lumps.
Pour the gelatine mixture into the mango puree along with the lime juice before combining well.
Transfer into a shallow dish or mould and refrigerate for 4-5 hours until firm. Cut and serve.
