Kaju Barfi, also known as Kaju Katli, is a traditional Indian cashew fudge. This smooth, melt-in-your-mouth sweet treat is flavoured with rose and can be customized with your favourite flavours.
1 cup/160 grams cashews (whole) ½ cup/100 grams sugar 5 tbsp water 1 tbsp ghee or coconut oil 1 tsp chopped rose petals or 1 tsp rose water or 8 to 9 strands of saffron (optional)
Grind the room-temperature cashews to a smooth, fine powder without releasing any oil. Heat sugar and water on low flame until the sugar completely dissolves.
Add the cashew powder to the sugar syrup and stir continuously on low flame. Cook the mixture for 7 to 9 minutes until it thickens and forms a dough.
Transfer the dough to a greased plate and add rose petals and ghee. Knead the dough lightly, flatten it, and roll it out to 3-5 mm thickness using a rolling pin.
Cool completely and cut into square or diamond shapes. Serve or store in an airtight container.
