Coconut rasam is a delicious stew that helps to stay hydrated in summer. You can drink it or pour it over steamed rice to have a comforting meal for lunch or dinner. Follow this quick guide to make it at home.
1 tbsp tamarind water 1.5 cups water ½ cup hot water Salt to taste ¼ tsp turmeric 2 tbsp rasam powder 1 cup coconut milk 2-3 tbsp coriander leaves ½ tsp mustard seeds 2 tbsp coconut oil A pinch of asafoetida 5-6 curry leaves 2 dry red chillies
Soak tamarind in hot water and squeeze nicely to extract the paste after 20 minutes.
Pour the tamarind extract into a pan and add more water to it.
Add turmeric powder and rasam powder. Let the blend simmer for 4-5 minutes.
Add coconut milk to the pan and sprinkle salt to taste.
Once rasam comes to a boil turn off the heat.
Temper it with mustard seeds, hing, curry leaves, and red chillies. Garnish with coriander leaves and enjoy.
