This rapid mushroom masala uses sliced mushrooms sautéed in a rich tomato-onion base with aromatic Indian spices. Because mushrooms release their own natural juices when exposed to heat, they create a rich gravy almost instantly without requiring long simmering times. It is an ideal recipe for rushed weekday dinners when you want a fragrant, home-cooked curry on the table in minutes.Ingredients
250g button mushrooms, cleaned and sliced 1 medium onion, finely chopped 1/2 cup tomato passata or pureed tomatoes 1 teaspoon ginger-garlic paste 1/2 teaspoon cumin seeds 1/2 teaspoon turmeric powder 1 teaspoon coriander powder 1/2 teaspoon red chilli powder 1/2 teaspoon garam masala 1.5 tablespoons oil Salt to taste Fresh coriander, chopped
Heat oil in a pan over medium-high heat, crackle cumin seeds, then sauté the chopped onions for two minutes until translucent before stirring in ginger-garlic paste.
Pour in tomato passata along with turmeric, coriander powder, red chilli powder, and salt, stirring rapidly for two minutes until the oil separates.
Add the sliced mushrooms to the pan, cover with a lid, and cook on medium heat for four minutes until tender.
Remove the lid, sprinkle with garam masala and fresh coriander, give everything a final stir, and serve hot with rotis or rice.
