Button mushrooms absorb spices effortlessly and cook in a fraction of the time required for root vegetables or legumes. This rapid mushroom masala uses sliced mushrooms sautéed in a rich tomato-onion base with aromatic Indian spices. Because mushrooms release their own natural juices when exposed to heat, they create a rich gravy almost instantly without requiring long simmering times. It is an ideal recipe for rushed weekday dinners when you want a fragrant, home-cooked curry on the table in minutes.Ingredients
