Puran poli is a classic Indian sweet flatbread. It is made with wheat flour called poli that is filled with a sweet filling of puran prepared from split chickpeas or chana dal and jaggery. Here is an easy recipe to follow.
1 cup of all-purpose flour 1 cup of wheat flour 1 cup chana dal ¼ tablespoons of turmeric powder Cooking oil as needed 1 cup of jaggery 1 teaspoon of cardamom powder 1 teaspoon of nutmeg powder Ghee as required Salt to taste
Mix the all-purpose flour, wheat flour, turmeric and salt together in a bowl.
Keep adding water as you knead the dough. It should be thin, not thick.
Brush over some oil. Keep kneading until soft. Cover and set aside for 1 hour.
Take the chana dal. Wash it well. Soak it for 6-8 hours. Transfer the soaked dal to a cooker. Add water.
Add turmeric powder, salt and mix well. Close the lid and set it for 2-3 whistles.
Strain excess water. Mash the dal. Add jaggery. Cook for 15-20 minutes.
Turn off the heat. Add the cardamom powder, nutmeg powder and mix. Use a spoon to place the stuffing inside the puran.
Roll it out. Toast it on a tawa. Flip it to the other side. Let it cook. Serve puran poli.
