Punjabi Meethe Pude Recipe: A Sweet Monsoon Treat

A plate of hot Meethe Pude and a cup of chai is a classic Punjabi way to enjoy the monsoon. Moreover, every Punjabi rasoi comes alive with the aroma of garma-garam Meethe Pude when the rains arrive. These soft Punjabi versions of pancakes are easy to make and incredibly satisfying.

Ingredients

– 1 cup wheat flour – ½ cup jaggery powder – Ghee – ¾ cup warm water – ½ teaspoon saunf – ¼ teaspoon elaichi powder – 2 tablespoons chopped almonds/cashews

Step 1

Dissolve the jaggery in warm water. Add the whole wheat flour, fennel seeds, cardamom powder, and nuts. Prepare a smooth batter.

Step 2

Allow the batter to sit for 10–15 minutes so the flavours blend in and the batter thickens.

Step 3

Heat a mildly oiled tawa over medium heat. Pour a ladleful of batter and spread it gently into a small pancake. Apply ghee and cook until evenly golden brown on both sides.

Step 4

Serve the meethe pude hot with a drizzle of ghee, chopped nuts, or a cup of chai for a delicious Punjabi-style breakfast or snack.
