Baigan ka bharta is among a few dishes that mask the pungent taste of brinjals and turn them into a lip-smacking delight. Punjabi baigan ka bharta is a recipe that every home chef should try.
6-8 garlic cloves 2 brinjals ½ cup onions, tomatoes 2 tbsp mustard oil 2 green chillies 1 tsp ginger, cumin seeds ½ tsp red chilli powder Salt to taste ¾ tsp garam masala Coriander leaves for garnish 1 tsp coriander powder
Grease brinjals and tomatoes with oil and roast them directly on the stove.
While brinjals and tomatoes cool off, saute ginger, cumin seeds, green chillies, and garlic in a pan.
Add onions and wait for them to turn pink. Remove the skin of roasted vegetables and mash them.
Add brinjals and tomatoes to the pan along with powdered spices.
Stir the ingredients and let them cook unless the oil floats on the surface.
Garnish the dish with coriander leaves and enjoy.
