Punjabi Amritsar Kulcha is a popular stuffed bread from Punjab, filled with spiced potatoes and herbs, cooked until crisp on the outside and soft on the inside. It is traditionally served with chole and chutney, making it a filling and flavourful meal.
2 cups all-purpose flour (maida) ½ cup curd 1 tsp baking powder ½ tsp baking soda 1 tsp sugar Salt to taste 2 medium potatoes (boiled and mashed) 1 small onion (finely chopped) 2 green chillies (finely chopped) 2 tbsp fresh coriander leaves (chopped) ½ tsp garam masala ½ tsp roasted cumin powder Butter for servingKetchup or your favourite dipping sauce
In a bowl, combine flour, curd, baking powder, baking soda, sugar, salt, and water to knead a soft dough. Rest for 2 hours.
Mix mashed potatoes, onion, chillies, coriander, garam masala, and cumin powder for the filling.
Roll out dough balls, stuff with the potato filling, and roll again into a thick kulcha.
Cook on a hot tawa or tandoor until golden brown, applying butter generously.
Serve hot with chole, pickle, and onion salad.
