Punjabi aloo paratha is North India’s favourite dish for breakfast, dinner, and lunch, especially during winter. It is fulfilling, nourishing, and oh-so delicious that you cannot keep your hands off it despite knowing that it is hot.
2 cups atta 4 boiled potatoes Salt to taste 1.5 tsp coriander powder 1 tsp red chilli powder 4 tbsp butter/ ghee ½ tsp garam masala ½ tsp cumin powder 1 tsp amchur powder 2 tbsp coriander leaves ¼ tsp saunf Water as needed
Sprinkle salt on atta and knead it into a soft dough. Keep it aside to rest for 15 minutes.
Mash boiled potatoes with your hands and add powdered spices.
Keep mixing the ingredients until you have a smooth blend. Add coriander leaves as well.
Take a small amount of dough, stuff it with aloo mixture, and roll it into a flat disc.
Use butter to roast the aloo paratha on a hot griddle.
Serve aloo paratha with onion-tomato chutney or green coriander chutney.
